38g Protein Chicken Enchiladas with Dreamy White Sauce

Delicious and protein-packed chicken enchiladas topped with a creamy white sauce.

  • 2 cups shredded cooked chicken
  • 1 cup enchilada sauce
  • 1 cup shredded cheese
  • 8 corn tortillas
  • 1/2 cup sour cream
  • 1/4 cup chopped cilantro
  • 1 teaspoon cumin
  • 1/2 teaspoon garlic powder

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix the chicken, 1/2 cup of enchilada sauce, and spices.
  3. Warm the tortillas and fill each with the chicken mixture. Roll them up and place seam-side down in a baking dish.
  4. Pour the remaining enchilada sauce over the rolled tortillas and top with cheese.
  5. Bake for 20 minutes until cheese is melted and bubbly.
  6. Top with sour cream and cilantro before serving.
