Blueberry Breakfast Quesadilla

Ingredients

  • 1 cup fresh blueberries
  • 2 flour tortillas
  • 1/2 cup cream cheese, softened
  • 1/4 cup shredded mozzarella cheese
  • 2 tablespoons honey
  • 1 teaspoon vanilla extract

Instructions

  1. In a bowl, mix the cream cheese, honey, and vanilla extract until smooth.
  2. Spread the cream cheese mixture evenly over one side of each tortilla.
  3. Layer the blueberries and mozzarella cheese on one tortilla, then place the other tortilla on top, cream cheese side down.
  4. Heat a non-stick skillet over medium heat and cook the quesadilla for 2-3 minutes on each side, or until golden brown.
  5. Remove from skillet, slice into wedges, and serve immediately.
