Broccoli Cheese Soup

  • 1 tablespoon olive oil
  • 1 cup chopped onion
  • 2 cups broccoli florets
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 cups shredded cheese (cheddar preferred)
  • 4 slices turkey bacon, cooked and crumbled
  • 1 teaspoon garlic powder
  • 1 teaspoon black pepper
  • 1 teaspoon salt

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onions and sauté until translucent.
  2. Add broccoli florets and broth; bring to a boil. Reduce heat and simmer until broccoli is tender.
  3. Stir in heavy cream, cheese, cooked turkey bacon, garlic powder, salt, and pepper.
  4. Cook until cheese melts and the soup is heated through. Serve warm.

Notes

  • For a thicker soup, blend a portion of it and stir back into the pot.
  • Feel free to add more vegetables like carrots or cauliflower for additional flavor.
