Ingredients

  • 1 medium butternut squash
  • 2 medium sweet potatoes
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 4 cups vegetable broth
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • Salt and pepper to taste
  • 1/2 cup coconut milk

Instructions

  1. Peel and cube the butternut squash and sweet potatoes.
  2. In a large pot, heat olive oil over medium heat and sauté onion and garlic until translucent.
  3. Add the cubed squash and sweet potatoes, and stir to combine.
  4. Pour in the vegetable broth and bring to a simmer.
  5. Add ginger, cinnamon, salt, and pepper. Cook until veggies are soft, about 20 minutes.
  6. Use an immersion blender to puree the soup until smooth.
  7. Stir in coconut milk and warm through before serving.
