  • 4 large russet potatoes
  • 1 tablespoon olive oil
  • 1 cup diced turkey bacon
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups shredded cheddar cheese
  • 1 cup heavy cream
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup chopped green onions

Instructions

  1. Peel and dice the potatoes. Set aside.
  2. In a large pot, heat olive oil over medium heat and cook turkey bacon until crispy.
  3. Add onions and garlic to the pot and sauté until translucent.
  4. Stir in the potatoes and chicken broth, bringing to a boil.
  5. Reduce heat and simmer for about 20 minutes or until potatoes are tender.
  6. Use an immersion blender to blend the soup until smooth.
  7. Stir in cheddar cheese and heavy cream, mixing until cheese is melted.
  8. Season with salt and pepper.
  9. Serve hot, garnished with green onions.
