  • 2 cups baby potatoes
  • 1 cup heavy cream
  • 2 tablespoons Dijon mustard
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a skillet, heat olive oil over medium-high heat and brown the chicken thighs on both sides.
  3. Add baby potatoes and garlic, then transfer the skillet to the oven.
  4. While the chicken and potatoes are baking, mix heavy cream and Dijon mustard in a bowl.
  5. After 25 minutes, pour the cream sauce over the chicken and potatoes, then bake for an additional 10 minutes.
  6. Garnish with fresh parsley before serving.
