  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1 large egg
  • 2 tablespoons unsalted butter, melted
  • 2 teaspoons ground cinnamon
  • 1/4 cup brown sugar
  • 1 teaspoon vanilla extract

Instructions

  1. In a large bowl, mix together the flour, sugar, baking powder, and salt.
  2. In another bowl, whisk together the milk, egg, melted butter, and vanilla extract.
  3. Combine the wet and dry ingredients until just mixed.
  4. In a small bowl, combine the brown sugar and cinnamon to make the filling.
  5. Heat a skillet over medium heat and pour 1/4 cup of pancake batter into the skillet.
  6. Drizzle some of the cinnamon mixture over the batter and swirl to combine.
  7. Cook until bubbles form, then flip and cook until golden brown.
  8. Repeat with remaining batter.
