- 1 cup whole wheat flour
- 1/2 cup protein powder
- 1/4 cup coconut sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/2 cup unsweetened applesauce
- 1/4 cup almond milk
- 1 egg
- 1 tbsp vanilla extract
- 2 tsp ground cinnamon
- Preheat your oven to 350°F (175°C) and line a muffin tin with liners.
- In a large bowl, mix together the dry ingredients: whole wheat flour, protein powder, coconut sugar, baking powder, baking soda, salt, and ground cinnamon.
- In another bowl, whisk together the wet ingredients: applesauce, almond milk, egg, and vanilla extract.
- Combine the wet ingredients with the dry ingredients and mix until just combined.
- Pour the batter into the prepared muffin tin, filling each cup about 2/3 full.
- Bake in the preheated oven for 18-20 minutes or until a toothpick comes out clean.
- Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.

- For added flavor, you can top the muffins with a light icing made from protein powder and almond milk.
