Cinnamon Roll Protein Muffins

These Cinnamon Roll Protein Muffins are a deliciously healthy twist on a classic treat. Easy to make and perfect for a guilt-free indulgence.

  • 1 cup whole wheat flour
  • 1/2 cup protein powder
  • 1/4 cup coconut sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup unsweetened applesauce
  • 1/4 cup almond milk
  • 1 egg
  • 1 tbsp vanilla extract
  • 2 tsp ground cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with liners.
  2. In a large bowl, mix together the dry ingredients: whole wheat flour, protein powder, coconut sugar, baking powder, baking soda, salt, and ground cinnamon.
  3. In another bowl, whisk together the wet ingredients: applesauce, almond milk, egg, and vanilla extract.
  4. Combine the wet ingredients with the dry ingredients and mix until just combined.
  5. Pour the batter into the prepared muffin tin, filling each cup about 2/3 full.
  6. Bake in the preheated oven for 18-20 minutes or until a toothpick comes out clean.
  7. Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.

Notes

  • For added flavor, you can top the muffins with a light icing made from protein powder and almond milk.
  • These muffins can also be frozen for easy grab-and-go breakfasts.
