- ½ cup granulated sugar
- 1 tablespoon baking powder
- ½ teaspoon salt
- ¼ teaspoon cinnamon
- ½ cup milk
- ⅓ cup vegetable oil
- 1 large egg
- 1 cup fresh cranberries
- 1 tablespoon orange zest
- ½ cup brown sugar
- ¼ cup melted butter
- ½ cup chopped nuts (optional)
- Preheat the oven to 400°F (200°C) and line a muffin tin with paper liners.
- In a large bowl, mix dry ingredients: flour, sugar, baking powder, salt, and cinnamon.
- In another bowl, combine milk, vegetable oil, and egg until blended.
- Pour the wet ingredients into the dry ingredients and mix until just combined. Gently fold in cranberries and orange zest.
- In a separate small bowl, combine brown sugar, melted butter, and nuts to make streusel topping.
- Fill muffin cups about 2/3 full with batter and sprinkle streusel topping on each.
- Bake for 18-20 minutes, or until a toothpick comes out clean.
- Allow muffins to cool in the pan for 5 minutes before transferring to a wire rack.
