Cranberry Orange Muffins with Streusel Topping

Delicious and easy-to-make cranberry orange muffins topped with a crunchy streusel, perfect for breakfast or a snack.

  • 1 ½ cups all-purpose flour
  • ½ cup granulated sugar
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • ¼ teaspoon cinnamon
  • ½ cup milk
  • ⅓ cup vegetable oil
  • 1 large egg
  • 1 cup fresh cranberries
  • 1 tablespoon orange zest
  • ½ cup brown sugar
  • ¼ cup melted butter
  • ½ cup chopped nuts (optional)

Instructions

  1. Preheat the oven to 400°F (200°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix dry ingredients: flour, sugar, baking powder, salt, and cinnamon.
  3. In another bowl, combine milk, vegetable oil, and egg until blended.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined. Gently fold in cranberries and orange zest.
  5. In a separate small bowl, combine brown sugar, melted butter, and nuts to make streusel topping.
  6. Fill muffin cups about 2/3 full with batter and sprinkle streusel topping on each.
  7. Bake for 18-20 minutes, or until a toothpick comes out clean.
  8. Allow muffins to cool in the pan for 5 minutes before transferring to a wire rack.

Notes

  • For a sweeter muffin, increase the sugar.
  • Store in an airtight container for up to 3 days.
