1 pound chicken breast, diced
8 ounces pasta of your choice
1 tablespoon Cajun seasoning
4 cups chicken broth
1 cup heavy cream
1 tablespoon olive oil
1 onion, chopped
2 cloves garlic, minced
1 cup bell pepper, diced
1 cup corn, frozen or canned
Salt and Pepper to taste
Instructions
In a pot, heat olive oil over medium heat. Add onion and garlic, sauté until fragrant.
Add diced chicken and Cajun seasoning, cooking until the chicken is no longer pink.
Pour in chicken broth and bring to a boil. Add pasta and cook according to package instructions.
Stir in heavy cream and corn, seasoning with salt and pepper. Simmer for a few minutes.
