  • 1 pound boneless, skinless chicken breasts
  • 1 cup diced carrots
  • 1 cup diced celery
  • 1 cup diced onion
  • 4 cloves garlic, minced
  • 8 cups chicken broth
  • 1 cup uncooked rice
  • 1 cup heavy cream
  • 1 teaspoon thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chicken and cook until browned; remove from pot.
  3. Add carrots, celery, and onion; sauté until tender.
  4. Add garlic and cook for 1 minute.
  5. Return chicken to the pot; add chicken broth and bring to a boil.
  6. Stir in rice and cook until tender, about 18 minutes.
  7. Reduce heat, stir in cream, thyme, salt, and pepper.
  8. Simmer for 5 minutes before serving.
  9. Garnish with parsley.

Notes

  • For a thicker soup, reduce the amount of broth.
  • Can add more vegetables like peas or corn for variation.
