1 pound ground chicken
1/2 cup breadcrumbs
1/4 cup grated Parmesan cheese
1 large egg
2 teaspoons lemon zest
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup heavy cream
2 tablespoons fresh lemon juice
1 tablespoon chopped parsley
Instructions
Preheat the oven to 400°F (200°C).
In a large bowl, mix together ground chicken, breadcrumbs, Parmesan cheese, egg, lemon zest, garlic powder, onion powder, salt, and black pepper until well combined.
Form the mixture into meatballs, about 1 inch in diameter, and place them on a baking sheet.
Bake the meatballs for 20-25 minutes or until cooked through and golden.
While the meatballs are baking, prepare the sauce by heating heavy cream and lemon juice in a saucepan over medium heat.
Once the meatballs are done, add them to the sauce and simmer for an additional 5 minutes.
Garnish with chopped parsley before serving.

For extra flavor, add 1 tablespoon of lemon pepper seasoning to the meatball mixture.
