  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 2 teaspoons lemon zest
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup heavy cream
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon chopped parsley

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, mix together ground chicken, breadcrumbs, Parmesan cheese, egg, lemon zest, garlic powder, onion powder, salt, and black pepper until well combined.
  3. Form the mixture into meatballs, about 1 inch in diameter, and place them on a baking sheet.
  4. Bake the meatballs for 20-25 minutes or until cooked through and golden.
  5. While the meatballs are baking, prepare the sauce by heating heavy cream and lemon juice in a saucepan over medium heat.
  6. Once the meatballs are done, add them to the sauce and simmer for an additional 5 minutes.
  7. Garnish with chopped parsley before serving.
