Creamy Roasted Butternut Squash Pasta with Sausage and Spinach

  • 1 medium butternut squash
  • 8 ounces pasta (your choice)
  • 1 pound Italian sausage
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • 1 teaspoon garlic powder
  • Salt to taste
  • Pepper to taste
  • Parmesan cheese for serving

Instructions

  1. Preheat the oven to 400°F (200°C). Cut the butternut squash in half, remove the seeds, and roast for 25-30 minutes until soft.
  2. Cook pasta according to package instructions, then drain.
  3. In a large skillet, cook the sausage over medium heat until browned, breaking it apart with a spoon.
  4. Add the cooked pasta to the skillet and mix with the sausage.
  5. Scoop out the roasted squash and add it to the skillet with garlic powder and heavy cream. Stir until combined and heated through.
  6. Add spinach and cook until wilted. Season with salt and pepper.
  7. Serve topped with grated Parmesan cheese.
