  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 2 teaspoons lemon juice
  • ¼ cup fresh parsley, chopped

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. On a baking sheet, toss the chopped cauliflower with olive oil, salt, and pepper.
  3. Roast in the oven for 25-30 minutes until golden brown and tender.
  4. In a large pot, sauté the chopped onion and garlic until translucent.
  5. Add the roasted cauliflower and vegetable broth to the pot.
  6. Bring to a boil, then reduce heat and simmer for 10 minutes.
  7. Blend the soup until smooth, then stir in the heavy cream and lemon juice.
  8. Serve hot, garnished with parsley.
