Creamy Spinach Mushroom Lasagna

A rich and delicious creamy spinach mushroom lasagna that makes for a perfect indulgent dinner.

  • 9 lasagna noodles lasagna noodles
  • 2 tablespoons olive oil
  • 1 onion onion, chopped
  • 3 cloves garlic, minced
  • 8 ounces mushrooms, sliced
  • 4 cups fresh spinach
  • 2 cups ricotta cheese
  • 2 cups mozzarella cheese, shredded
  • 1 cup Parmesan cheese, grated
  • 1 egg egg
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • salt and pepper to taste
  • 2 cups marinara sauce

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the lasagna noodles according to package instructions, drain, and set aside.
  3. In a skillet, heat olive oil over medium heat. Add onion and garlic, sauté until soft.
  4. Add mushrooms and cook until browned, then stir in spinach and cook until wilted.
  5. In a bowl, combine ricotta cheese, egg, basil, oregano, salt, and pepper.
  6. To assemble, spread a layer of marinara sauce in a baking dish. Layer 3 noodles, half of the ricotta mixture, half of the mushroom mixture, and a layer of mozzarella. Repeat.
  7. Top with remaining noodles and sauce, and sprinkle with Parmesan cheese.
  8. Bake for 30-35 minutes until cheese is bubbly and golden.
  9. Let it cool for 10 minutes before serving.

Notes

  • For a richer flavor, use a combination of cheeses.
  • Add a side salad for a complete meal.
