Creamy Tuscan Ravioli Soup

A rich and creamy soup filled with delicious ravioli, perfect for a cozy weeknight dinner.

  • 1 medium onion, diced
  • 4 cloves garlic, minced
  • 2 cups chicken or vegetable broth
  • 1 can (15 ounces) crushed tomatoes
  • 1 teaspoon Italian seasoning
  • 1 cup heavy cream
  • 1 package (9 ounces) cheese ravioli
  • 2 cups fresh spinach
  • 1/2 cup grated Parmesan cheese

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
  2. Add the minced garlic and cook for another minute, until fragrant.
  3. Pour in the chicken or vegetable broth and crushed tomatoes. Stir in the Italian seasoning.
  4. Bring the mixture to a boil, then reduce the heat and let simmer for 10 minutes.
  5. Stir in the heavy cream and bring back to a gentle simmer.
  6. Add the ravioli and cook according to package instructions, typically around 4-5 minutes.
  7. Just before serving, stir in the fresh spinach and grated Parmesan cheese until the spinach wilts.
  8. Serve hot and enjoy!
