Creamy Vegetarian Tortilla Soup

A creamy and comforting tortilla soup loaded with fresh vegetables and spices.

Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 can (14.5 ounces) diced tomatoes
  • 4 cups vegetable broth
  • 1 cup corn, frozen or canned
  • 1 cup black beans, drained and rinsed
  • 2 cups bell peppers, chopped
  • 1 medium zucchini, chopped
  • 1 teaspoon salt, to taste
  • 1/2 teaspoon black pepper, to taste
  • 1 avocado, diced, for topping
  • 1/4 cup fresh cilantro, chopped, for garnish
  • tortilla strips, for topping

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onions and garlic, sauté until soft.
  2. Add cumin and chili powder, cook for an additional minute.
  3. Stir in diced tomatoes, vegetable broth, corn, black beans, bell peppers, and zucchini.
  4. Bring to a boil, then reduce heat and let simmer for 20 minutes.
  5. Season with salt and pepper to taste.
  6. Serve hot, topped with diced avocado, cilantro, and tortilla strips.

Notes

  • This soup can be made ahead of time and tastes even better the next day.
  • Feel free to add your favorite vegetables!
