  • 1 cup cornstarch
  • 2 eggs
  • 1 cup panko breadcrumbs
  • 1/2 cup mayonnaise
  • 1/4 cup sweet chili sauce
  • 1 tablespoon sriracha
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • salt to taste
  • pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cut the chicken breast into bite-sized pieces.
  3. Set up a breading station with cornstarch, beaten eggs, and panko breadcrumbs.
  4. Coat each piece of chicken in cornstarch, then dip in egg, and finally coat with panko breadcrumbs.
  5. Place the breaded chicken on a baking tray lined with parchment paper.
  6. Bake in the preheated oven for 20-25 minutes or until golden and crispy.
  7. While the chicken is baking, mix together mayonnaise, sweet chili sauce, sriracha, garlic powder, onion powder, salt, and pepper in a bowl.
  8. Once the chicken is done, toss it in the sauce until well coated.

Notes

  • For extra crunch, double bread the chicken by repeating the egg and panko step.
  • Adjust the sriracha for more or less heat according to preference.
