Crispy Vegetarian Egg Rolls

  • 1 cup shredded cabbage
  • 1 cup grated carrots
  • 1/2 cup chopped green onions
  • 1 cup bean sprouts
  • 2 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 1 tablespoon sesame oil
  • 10 egg roll wrappers
  • Vegetable oil for frying

Instructions

  1. In a large mixing bowl, combine the cabbage, carrots, green onions, bean sprouts, garlic, soy sauce, and sesame oil.
  2. Lay an egg roll wrapper on a clean surface, with a corner pointed towards you.
  3. Add 2 tablespoons of the filling mixture to the center of the wrapper.
  4. Fold the bottom corner over the filling, then fold in the sides and roll tightly to seal.
  5. Heat vegetable oil in a deep pan over medium heat.
  6. Fry the egg rolls until golden brown and crispy, about 3-4 minutes on each side.
  7. Remove and drain on paper towels.

Notes

  • Serve with sweet and sour sauce or soy sauce for dipping.
  • For extra crunch, you can add chopped bell peppers to the filling.
