Dark Chocolate Raspberry Mousse Cake

  • 8 ounces dark chocolate, chopped
  • 4 large eggs, separated
  • 1/2 cup granulated sugar
  • 1 cup heavy cream
  • 1 cup fresh raspberries

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Melt the dark chocolate in a double boiler.
  3. In a bowl, whisk the egg yolks and sugar until pale.
  4. Fold the melted chocolate into the egg mixture.
  5. In another bowl, whip the cream until stiff peaks form.
  6. Gently fold the whipped cream into the chocolate mixture.
  7. In a separate bowl, beat the egg whites until stiff peaks form.
  8. Fold the egg whites into the chocolate mixture carefully.
  9. Pour the mousse into serving dishes and refrigerate for at least 2 hours.
  10. Top with fresh raspberries before serving.

  • For an extra touch, consider adding a sprinkle of sea salt on top before serving.
