  • 2 large eggs
  • 1 tablespoon baking powder

  • 1/2 cup brown sugar
  • 1/4 cup chopped pecans (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, cream together the butter and granulated sugar until light and fluffy.
  3. Beat in the eggs one at a time, then stir in the milk.
  4. In another bowl, combine the flour, baking powder, salt, and cinnamon.
  5. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  6. In a small bowl, mix brown sugar, pecans, and a pinch of cinnamon for the streusel topping.
  7. Fill the muffin cups halfway with batter, sprinkle with streusel, then top off with more batter.
  8. Bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean.
  9. Let cool for a few minutes before transferring to a wire rack to cool completely.
