Easy Gingerbread Tiramisu

  • 2 cups brewed coffee, cooled
  • 4 ounces cream cheese, softened
  • 1 cup heavy cream
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 2 cups gingerbread cookies, crushed
  • 2 tablespoons cocoa powder

Instructions

  1. In a large bowl, beat the cream cheese until smooth.
  2. Add in the heavy cream, sugar, vanilla, ginger, and cinnamon, and whip until it forms soft peaks.
  3. Dip each gingerbread cookie briefly in the cooled coffee.
  4. Layer the cookies and cream mixture in a serving dish, starting with a layer of cookies.
  5. Repeat the layers until all ingredients are used, finishing with the cream mixture on top.
  6. Sprinkle cocoa powder over the top and refrigerate for at least 4 hours before serving.

Notes
