  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 4 slices turkey bacon
  • 2 tablespoons all-purpose flour
  • 2 cups milk
  • 4 eggs
  • 1/4 cup chopped green onions

Instructions

  1. Peel and shred the potatoes, then squeeze out excess moisture.
  2. Heat olive oil in a skillet over medium heat and add the shredded potatoes, pressing them into a flat layer.
  3. Cook until the bottom is golden brown, then flip and cook the other side until crispy.
  4. While the hash browns cook, in another pan, cook the turkey bacon until crispy and set aside.
  5. In the same pan, add flour to the bacon drippings, then whisk in milk to create a gravy. Cook until thickened.
  6. Fry the eggs in a separate pan, sunny-side-up or to your preference.
  7. Serve the crispy hash browns topped with bacon gravy and a fried egg, garnished with green onions.
