Ingredients

  • 8 ounces rigatoni pasta
  • 1 cup feta cheese, crumbled
  • 1 cup cranberries
  • 1/2 cup walnuts, chopped
  • 1/4 cup red onion, finely chopped
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon Dijon mustard
  • Salt to taste
  • Pepper to taste

Instructions

  1. Cook the rigatoni pasta according to package instructions. Drain and let cool.
  2. In a large bowl, combine the pasta with feta cheese, cranberries, walnuts, and red onion.
  3. In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard, salt, and pepper.
  4. Pour the dressing over the pasta salad and toss to combine.
