  • 1/2 cup Greek yogurt
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 2 teaspoons pumpkin pie spice
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, combine pumpkin puree, Greek yogurt, sugar, brown sugar, eggs, and vanilla extract until smooth.
  3. In another bowl, whisk together flour, baking powder, baking soda, pumpkin pie spice, and salt.
  4. Gradually fold the dry ingredients into the wet ingredients until just combined.
  5. Fill each muffin liner about two-thirds full with the batter.
  6. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  7. Allow to cool for a few minutes before transferring to a wire rack.
