Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together the flour, baking soda, ginger, cinnamon, nutmeg, and salt.
  3. In another bowl, mix the brown sugar, molasses, vegetable oil, and eggs until well combined.
  4. Gradually add the wet ingredients to the dry ingredients, alternating with the buttermilk until just combined.
  5. Divide the batter evenly among the muffin cups.
  6. Bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean.
  7. Let cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
