Gouda & Mushroom Stuffed Chicken

  • 4 chicken breasts
  • 1 cup Gouda cheese, shredded
  • 1 cup mushrooms, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon thyme

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat and sauté garlic and mushrooms until softened.
  3. Mix in Gouda cheese and season with salt, pepper, and thyme.
  4. Cut pockets into each chicken breast and stuff with the mushroom and cheese mixture.
