High Protein Broccoli Cheddar Soup

A creamy, delicious soup packed with high protein from turkey bacon and cheese, perfect for a comforting meal.

Ingredients

  • 4 cups broccoli florets
  • 1 cup shredded cheddar cheese
  • 1 cup cooked turkey bacon, chopped
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil

Instructions

  1. In a large pot, heat olive oil over medium heat and sauté the onion and garlic until softened.
  2. Add the broccoli and chicken broth, and bring to a boil. Reduce heat and simmer until broccoli is tender.
  3. Stir in the heavy cream and cheddar cheese until melted and smooth.
  4. Add the turkey bacon and season with salt and pepper. Stir well and cook for an additional 5 minutes.
  5. Serve hot, garnished with extra cheddar cheese if desired.

Notes

  • For a thicker soup, use an immersion blender to puree a portion of the soup.
  • Feel free to substitute other vegetables like cauliflower for variety.
