High Protein Creamy Taco Soup

Ingredients

  • 1 pound ground turkey
  • 1 can (15 ounces) black beans, rinsed and drained
  • 1 can (15 ounces) corn, drained
  • 1 can (10 ounces) diced tomatoes with green chilies
  • 1 packet taco seasoning
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1 tablespoon olive oil
  • 1 diced onion
  • 2 minced garlic cloves
  • 1 jalapeño, diced

Instructions

  1. In a large pot, heat olive oil over medium heat. Add diced onion, garlic, and jalapeño; sauté until softened.
  2. Add ground turkey and cook until browned.
  3. Stir in the taco seasoning, diced tomatoes, black beans, corn, and chicken broth. Bring to a boil.
  4. Reduce heat and let simmer for 15 minutes.
  5. Stir in heavy cream and cheddar cheese until melted. Serve hot.

Notes

  • Top with additional cheese and cilantro for extra flavor.
  • This soup can be made ahead of time and tastes even better the next day.
