  • 2 cups cooked shredded chicken
  • 1 cup queso cheese dip
  • 8 corn tortillas
  • 1 cup enchilada sauce
  • 1 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon black pepper
  • 1/2 cup shredded cheese for topping

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Mix the shredded chicken with cumin, garlic powder, onion powder, and black pepper in a bowl.
  3. Warm the corn tortillas in a skillet until pliable.
  4. Spread some enchilada sauce at the bottom of a baking dish.
  5. Fill each tortilla with the chicken mixture and a spoonful of queso, then roll them up and place seam-side down in the dish.
  6. Top with remaining enchilada sauce and sprinkle shredded cheese on top.
  7. Bake for 20 minutes or until cheese is melted and deliciously bubbly.
