- 2 cups all-purpose flour
- 1 cup sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, melted
- 1 cup orange juice
- 2 large eggs
- 1 cup fresh cranberries
- 1/2 cup brown sugar
- 1/4 cup all-purpose flour
- 1/2 teaspoon ground cinnamon
- 1/4 cup unsalted butter, cold
- Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners.
- In a large bowl, combine the flour, sugar, baking powder, and salt.
- In another bowl, whisk together the melted butter, orange juice, and eggs.
- Pour the wet ingredients into the dry ingredients and mix until just combined. Gently fold in the cranberries.
- In a separate bowl, combine the brown sugar, flour, and cinnamon. Cut in the cold butter until crumbly.
- Fill the muffins cups 2/3 full with batter and sprinkle the crumb topping on each muffin.
- Bake for 18-20 minutes or until a toothpick comes out clean. Let cool before serving.
Notes
- For an extra burst of flavor, add orange zest to the batter.
