Irresistible Cranberry Orange Muffins with Crumb Topping

These muffins are a delightful combination of tart cranberries and sweet orange, topped with a crunchy crumb topping.

  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1 cup orange juice
  • 2 large eggs
  • 1 cup fresh cranberries
  • 1/2 cup brown sugar
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup unsalted butter, cold

Instructions

  1. Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a large bowl, combine the flour, sugar, baking powder, and salt.
  3. In another bowl, whisk together the melted butter, orange juice, and eggs.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined. Gently fold in the cranberries.
  5. In a separate bowl, combine the brown sugar, flour, and cinnamon. Cut in the cold butter until crumbly.
  6. Fill the muffins cups 2/3 full with batter and sprinkle the crumb topping on each muffin.
  7. Bake for 18-20 minutes or until a toothpick comes out clean. Let cool before serving.

Notes

  • For an extra burst of flavor, add orange zest to the batter.
  • These muffins are best served fresh but can also be frozen for later enjoyment.
