- 1 pound boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 medium onion, diced
- 3 cloves garlic, minced
- 2 cans white beans, drained and rinsed
- 1 can corn, drained
- 1 can diced green chiles
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 4 cups chicken broth
- 1 cup heavy cream
- 1 cup shredded cheese
- 2 cups spinach, chopped
- In a large pot, heat olive oil over medium heat. Add diced onion and sauté until translucent.
- Add garlic and cook until fragrant.
- Add chicken and cook until no longer pink. Shred the chicken using two forks.
- Stir in white beans, corn, green chiles, cumin, chili powder, and chicken broth. Bring to a boil.
- Reduce heat and let simmer for 20 minutes.
- Stir in heavy cream and cheese, followed by chopped spinach. Cook until spinach is wilted.
