  • 1 pound boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 cans white beans, drained and rinsed
  • 1 can corn, drained
  • 1 can diced green chiles
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup shredded cheese
  • 2 cups spinach, chopped

Instructions

  1. In a large pot, heat olive oil over medium heat. Add diced onion and sauté until translucent.
  2. Add garlic and cook until fragrant.
  3. Add chicken and cook until no longer pink. Shred the chicken using two forks.
  4. Stir in white beans, corn, green chiles, cumin, chili powder, and chicken broth. Bring to a boil.
  5. Reduce heat and let simmer for 20 minutes.
  6. Stir in heavy cream and cheese, followed by chopped spinach. Cook until spinach is wilted.
