Keto White Chicken Chili

A delicious and healthy keto-friendly chili made with white chicken, great for cold days.

  • 1 pound boneless, skinless chicken breasts
  • 2 cups chicken broth
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 can diced green chilies
  • 1/2 cup heavy cream
  • 1 cup cauliflower, riced
  • 1/4 cup chopped cilantro
  • Salt to taste
  • Pepper to taste

Instructions

  1. In a large pot, combine chicken broth, chicken, cumin, chili powder, garlic powder, and onion powder.
  2. Bring to a boil and then reduce heat, simmering until chicken is cooked through.
  3. Remove chicken, shred it, and return it to the pot.
  4. Add green chilies, heavy cream, and riced cauliflower.
  5. Cook for an additional 10 minutes, stirring occasionally.
  6. Season with salt and pepper, and serve garnished with cilantro.

Notes

  • Serve with avocado slices for added creaminess.
  • Can be topped with shredded cheese for additional flavor.
