- 1 pound boneless, skinless chicken breasts
- 2 cups chicken broth
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1 can diced green chilies
- 1/2 cup heavy cream
- 1 cup cauliflower, riced
- 1/4 cup chopped cilantro
- Salt to taste
- Pepper to taste
- In a large pot, combine chicken broth, chicken, cumin, chili powder, garlic powder, and onion powder.
- Bring to a boil and then reduce heat, simmering until chicken is cooked through.
- Remove chicken, shred it, and return it to the pot.
- Add green chilies, heavy cream, and riced cauliflower.
- Cook for an additional 10 minutes, stirring occasionally.
- Season with salt and pepper, and serve garnished with cilantro.
