Lemon Arugula Pasta Salad

  • 4 cups arugula
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, thinly sliced
  • 1/3 cup olive oil
  • 1/4 cup fresh lemon juice
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Cook the fusilli pasta according to package directions. Drain and set aside.
  2. In a large bowl, combine arugula, cherry tomatoes, and red onion.
  3. In a separate bowl, whisk together olive oil, lemon juice, Dijon mustard, salt, and pepper.
