  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup cream cheese, softened
  • 1/4 cup butter, softened
  • 1 large egg
  • 1 tablespoon lemon zest
  • 1/2 cup lemon juice

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a mixing bowl, combine the flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, cream together the cream cheese and butter until smooth.
  4. Add the egg, lemon zest, and lemon juice to the cream cheese mixture and mix well.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Scoop the batter into the prepared muffin tin and fill each cup about 2/3 full.
  7. Bake for 18-20 minutes or until a toothpick inserted comes out clean.
  8. Allow the muffins to cool in the pan for 5 minutes, then transfer to a wire rack.

Notes

  • These muffins are best served warm with a pat of butter.
  • Feel free to add poppy seeds for additional texture.
