  • 2 cups cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1/2 cup sour cream
  • 1/4 cup fresh lemon juice
  • 1 tablespoon dried lavender flowers
  • 1/3 cup honey, for drizzling
  • 1/4 cup honeycomb, for garnish

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the graham cracker crumbs and melted butter until well combined.
  3. Press the mixture into the bottom of a springform pan to form the crust.
  4. In another bowl, beat the cream cheese and sugar until smooth.
  5. Add the eggs one at a time, mixing well after each addition.
  6. Stir in the sour cream, lemon juice, and dried lavender until fully incorporated.
  7. Pour the cheesecake mixture into the prepared crust.
  8. Bake for 50-60 minutes, or until the center is set.
  9. Let cool, then refrigerate for at least 4 hours.
  10. Before serving, drizzle with honey and garnish with honeycomb.
