Loaded Potato Taco Bowl

  • 4 large potatoes
  • 1 pound ground beef
  • 1 packet taco seasoning
  • 1 cup shredded cheddar cheese
  • 1 cup sour cream
  • 1 cup diced tomatoes
  • 1/4 cup chopped green onions
  • 1/2 cup guacamole

Instructions

  1. Preheat the oven to 400°F.
  2. Wash and pierce the potatoes, then bake for approximately 45 minutes or until tender.
  3. While the potatoes are baking, cook the ground beef in a skillet over medium heat until browned.
  4. Stir in the taco seasoning and follow the package instructions.
  5. Once the potatoes are done, cut them open and fluff the insides with a fork.
  6. Top each potato with ground beef, shredded cheese, sour cream, diced tomatoes, green onions, and guacamole.
