  • 2 large russet potatoes
  • 1 pound ground beef
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1 taco seasoning packet
  • 1 cup diced tomatoes
  • 1/4 cup chopped green onions
  • 1 avocado, sliced

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and pierce the russet potatoes with a fork, then bake for 45-60 minutes until soft.
  3. In a skillet, cook the ground beef over medium heat until browned; drain the fat.
  4. Add taco seasoning to the beef and follow package instructions.
  5. Once the potatoes are done, cut them in half and fluff the insides with a fork.
  6. Top the potatoes with seasoned beef, cheddar cheese, sour cream, diced tomatoes, green onions, and avocado slices.

Notes

  • For extra flavor, add jalapeños or other toppings of your choice.
