  • 4 medium russet potatoes
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon chili powder
  • 1 pound ground beef or turkey
  • 1 cup black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 cup shredded cheese
  • 1/2 cup sour cream
  • 1 cup diced tomatoes
  • 1/4 cup green onions, chopped

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and pierce the potatoes with a fork. Bake for about 45 minutes, or until tender.
  3. While the potatoes are baking, heat olive oil in a skillet over medium heat. Add ground meat and cook until browned.
  4. Stir in smoked paprika, garlic powder, and chili powder; mix well.
  5. Once potatoes are cooked, cut them in half and fluff the insides with a fork.
  6. Layer the taco mixture, black beans, corn, and cheese on top of the potatoes.
  7. Return to the oven for an additional 10 minutes to melt the cheese.
  8. Serve with sour cream, diced tomatoes, and green onions on top.
