Mac and Cheese Meatloaf Casserole

A delicious twist on classic meatloaf with creamy mac and cheese and turkey bacon.

Ingredients

  • 1 pound elbow macaroni
  • 1 pound ground turkey
  • 4 slices turkey bacon
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 2 large eggs
  • 1/2 cup milk
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat the oven to 350°F.
  2. Cook the macaroni according to package instructions; drain.
  3. In a skillet, cook the turkey bacon until crispy. Remove and chop.
  4. In a large bowl, mix the ground turkey, cooked macaroni, chopped bacon, cheeses, eggs, milk, and seasonings.
  5. Transfer the mixture to a greased baking dish.
  6. Bake for 45 minutes or until heated through and slightly golden on top.

Notes

  • For added flavor, consider mixing in your favorite vegetables.
  • Leftovers can be reheated in the microwave.
