Maple Dijon Chicken Sweet Potato Bowls

A delicious and healthy combination of roasted sweet potatoes, chicken, and a maple dijon dressing.

Ingredients

  • 2 sweet potatoes, diced
  • 1 pound chicken breast, cubed
  • 1/4 cup maple syrup
  • 2 tablespoons Dijon mustard
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, mix maple syrup, Dijon mustard, olive oil, salt, and pepper.
  3. Toss the chicken cubes in half of the maple Dijon mixture.
  4. Spread the diced sweet potatoes on a baking sheet and drizzle with olive oil, salt, and pepper.
  5. Arrange chicken over the sweet potatoes.
  6. Bake for about 25-30 minutes or until the chicken is cooked through and sweet potatoes are tender.
  7. Serve warm, drizzling the remaining maple Dijon sauce on top.
