Moroccan Lamb Stew Recipe

  • 2 pounds lamb shoulder, cubed
  • 2 tablespoons olive oil
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 2 teaspoons ground cumin
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground ginger
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper
  • 4 cups beef broth
  • 1 can (14 ounces) diced tomatoes
  • 2 cups carrots, sliced
  • 1 cup chickpeas, rinsed and drained
  • 1 cup dried apricots, chopped
  • 1/4 cup fresh cilantro, chopped
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add the cubed lamb and brown on all sides.
  2. Add the onion and garlic, cooking until softened.
  3. Stir in the spices: cumin, cinnamon, ginger, paprika, and cayenne.
  4. Pour in the beef broth and diced tomatoes, bringing the mixture to a boil.
  5. Reduce heat, cover, and simmer for 1.5 to 2 hours until the lamb is tender.
  6. Add carrots, chickpeas, and apricots; cook for an additional 30 minutes.
  7. Stir in fresh cilantro, and season with salt and pepper before serving.

Notes

  • Serve with couscous or crusty bread for a complete meal.
  • This stew can also be made in a slow cooker for convenience.
