  • 2 cups sweetened shredded coconut
  • 1 cup chopped pecans
  • 8 ounces cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream
  • 1 cup chocolate ganache

Instructions

  1. In a medium bowl, combine graham cracker crumbs and melted butter. Press mixture into the bottom of a pie dish.
  2. In another bowl, mix together coconut and chopped pecans.
  3. In a large bowl, beat cream cheese until smooth. Gradually add powdered sugar and vanilla, mixing until well combined.
  4. In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture.
  5. Spread half of the cream cheese mixture over the graham cracker crust.
  6. Add a layer of the coconut and pecan mixture over the cream cheese layer.
  7. Pour the remaining cream cheese mixture on top, followed by the chocolate ganache.
  8. Refrigerate for at least 4 hours or until set.

Notes

  • For a richer flavor, use dark chocolate ganache instead of milk chocolate.
  • Allow the pie to sit at room temperature for about 15 minutes before slicing for easier serving.
