Ingredients
Scale
1 ½ cups chocolate cookie crumbs
½ cup unsalted butter, melted
1 cup evaporated milk
1 cup granulated sugar
3 large egg yolks
4 ounces bittersweet chocolate, chopped
1 teaspoon vanilla extract
1 cup sweetened shredded coconut
1 cup chopped pecans
1 ½ cups heavy whipping cream
¼ cup powdered sugar
Instructions
In a mixing bowl, combine chocolate cookie crumbs and melted butter until the mixture resembles wet sand. Press into the bottom and sides of a pie dish to form the crust.
In a saucepan over medium heat, combine evaporated milk, granulated sugar, and egg yolks. Whisk continuously until the mixture thickens.
Remove from heat, add chopped chocolate and vanilla extract, stirring until chocolate is melted and smooth.
Stir in shredded coconut and chopped pecans. Pour filling into the prepared crust and refrigerate until set.
In a separate bowl, whip heavy cream and powdered sugar until stiff peaks form. Spread over the cooled pie before serving.
Notes
For a richer flavor, consider adding a pinch of sea salt to the filling.
Make sure to refrigerate the pie for at least 4 hours for the best texture.
