Ingredients
Scale
1 pound orzo pasta
2 pounds chicken breast, diced
2 tablespoons Cajun seasoning
4 cups chicken broth
1 cup heavy cream
1 cup grated Parmesan cheese
2 tablespoons olive oil
2 cloves garlic, minced
1 bell pepper, diced
1 onion, diced
1/4 cup fresh parsley, chopped
Salt and pepper to taste
Instructions
In a large pot, heat the olive oil over medium heat. Add the diced chicken and Cajun seasoning, cooking until the chicken is browned and cooked through.
Add the diced onion, bell pepper, and garlic to the pot. Sauté until the vegetables are softened.
Stir in the orzo and chicken broth. Bring to a boil, then reduce heat and simmer until the orzo is tender and most of the liquid is absorbed.
Stir in the heavy cream and Parmesan cheese. Cook for an additional 2-3 minutes until creamy.
Season with salt and pepper, and mix in fresh parsley before serving.
Notes
For a spicier dish, add more Cajun seasoning or red pepper flakes.
This dish can easily be made with shrimp instead of chicken for a different protein option.
