  • 2 ripe bananas
  • 1/2 cup honey
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 cup rolled oats
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with muffin liners.
  2. In a large bowl, mix the peanut butter, mashed bananas, honey, eggs, and vanilla extract until smooth.
  3. In another bowl, combine the rolled oats, baking soda, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until well combined. Fold in chocolate chips if using.
  5. Divide the batter evenly among the muffin liners.
  6. Bake for 15-20 minutes, or until a toothpick comes out clean.
  7. Let cool in the pan for 5 minutes before transferring to a wire rack.
