Pennsylvania Dutch Chicken Pot Pie

  • 1 pound chicken, diced
  • 1 cup carrots, chopped
  • 1 cup celery, chopped
  • 1 onion, diced
  • 3 cups chicken broth
  • 2 cups potatoes, diced
  • 1 teaspoon thyme
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 cup all-purpose flour
  • 1 pie crust, for topping

Instructions

  1. In a large pot, heat the vegetable oil over medium heat.
  2. Add the chicken and cook until browned.
  3. Stir in the carrots, celery, and onion; cook until softened.
  4. Add the chicken broth, potatoes, thyme, salt, and pepper.
  5. Bring to a boil, then reduce heat and simmer for 20 minutes.
  6. Stir in the flour to thicken the mixture.
  7. Pour the chicken mixture into a baking dish and cover with pie crust.
  8. Bake at 375°F for 30-35 minutes or until the crust is golden brown.
