  • 1/2 cup Greek yogurt
  • 1/2 cup almond flour
  • 1/4 cup protein powder
  • 1/4 cup honey or maple syrup
  • 2 eggs
  • 1 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine pumpkin puree, Greek yogurt, honey, and eggs.
  3. In another bowl, mix almond flour, protein powder, baking soda, and spices.
  4. Gradually add dry ingredients to the wet ingredients until smoothly combined.
  5. Pour the batter into muffin tins and bake for 20-25 minutes.
  6. Allow to cool before serving.

  • These muffins freeze well for up to 3 months.
