Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a bowl, combine pumpkin puree, sugar, brown sugar, and oil until smooth.
  3. Beat in the eggs, one at a time, mixing well after each addition.
  4. In a separate bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  5. Gradually add the dry ingredients to the wet mixture and stir until just combined.
  6. If using, fold in the chopped nuts.
  7. Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
  8. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  9. While the muffins cool, prepare the frosting by mixing cream cheese and powdered sugar until smooth.
