Pumpkin Cinnamon Roll Muffins

  • 1 cup pumpkin puree
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 tsp salt
  • 1/4 cup cinnamon sugar mixture for topping

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix together pumpkin puree, sugar, brown sugar, and vegetable oil until smooth.
  3. Add in the eggs one at a time, mixing well after each addition.
  4. In another bowl, combine flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  5. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
  6. Spoon the batter into the prepared muffin tins, filling each cup about 3/4 full.
  7. Sprinkle the cinnamon sugar mixture on top of each muffin.
  8. Bake for 18-20 minutes until a toothpick inserted in the center comes out clean.
  9. Allow to cool for a few minutes before transferring to a wire rack to cool completely.

Notes

  • For a richer flavor, consider adding chopped nuts or chocolate chips to the batter.
  • These muffins can be enjoyed warm or at room temperature.
